I have been trying to find out how to get RPM to email print jobs - what I real want to do it put the email address in the a simple text and send this to that email address but can not find any information on tags etc

I'm not sure I fully understand your question.
The email action is what you would use to email incoming print jobs to a recipient. Email actions can send to a static recipient or you can use the User or Mail attributes from the control file (using the <P> or <M> tags) to build a recipient address (<P>@emaildomain.dom for example) assuming those values have what you are looking for.
If the incoming data file has the recipient address, and you have RPM Elite, you may be able to use the Data Extraction transform to get at the recipient address.
